Coconut
snowflakes are like nothing you've ever experienced before! Fresh
organic coconuts from the Philippines are de-shelled and quickly frozen
to 20 degrees F below zero. The temperature is held there while
the frozen moisture is evaporated by a vacuum. Because the moisture from
the coconut never goes into the water stage, but rather from a solid
right into a gas, the esters and resulting flavor of the coconut meat
are preserved making it intensely sweet and flavorful. In
comparison to regular flaked or shredded coconut (which are air dried)
the flavor is much different. The freeze drying locks in the flavor.

gives the coconut flakes a different consistency than regular coconut
flakes. The consistency is almost powdery as the flakes quickly melt on
