Coconut Snowflakes are a superior product in comparison to regular dried coconut flakes. First of all, air-dried coconut has a much higher moisture content, less coconut taste, and requires sulfites to preserve it. Most air-dried coconut is dried at temperatures between 170 and 180 degrees F. On top of this, even the shredded coconut found in health food stores contains sulfites. If it did not have the sulfites as a preservative it would turn brown before it sold in most stores. Most shredded coconut products have preservatives along with things like propylene glycol and sugar added. Coconut Snowflakes contains no preservatives but because of it's low moisture content it has a long shelf life of about 1 1/2 years.

Also, most dried shredded coconut is a by product of the coconut oil industry. Therefore, most of the oil has already been extracted from the  flakes.  Since coconut snowflakes are not a by product  of the oil industry they retain the flavorful and healthy coconut oil.
